I am really, really behind when it comes to famous tonkotsu ramen places. Can you believe it wasn't until the end of 2021 that I tried my first bowl of Ichiran Tonkotsu ramen?
Ichiran has been around since 1960, perfecting their tonkotsu milky pork bone broth as the perfect base for their ramen.
Their restaurants are known for being "private", meaning each diner (even within couples and families) dines separately in a cubby. The idea is that eating ramen is a serious affair, and you shouldn't be talking. You should concentrate on enjoying your ramen. Slurping is absolutely permitted, and, in fact, encouraged.
And slurp you should. It'll help you fully enjoy the flavors of that rich, savory, and delicious broth. The noodles have great texture, and all the parts come together into a really satisfying meal.
Drinks and food come out of a little window right in front. Help yourself to hot water. There's a personal spout right at your cubby hole.
Come to think of it, it's really very Covid-friendly.
You never have to interact with anyone. Choose your broth, noodle type, toppings, and off you go.
Slurp away, and enjoy.
