    Savage Brussels - A Plant Focused Experience

    Savage is a hot new trendy restaurant in the Ixelles neighborhood of Brussels in Belgium. It’s interesting in that it really focuses on vegetables, to the point that the main tasting does not include any meat.

    Their mantra is "A plant-focused experience, with meat and fish as optional extras."

    The protein dishes are optional sides that you can add to share family style (e.g., steaks, scallops, etc.). We actually decided -  and I was surprised that Bryan agreed to this - to go with the vegetarian tasting without adding any protein.

    The dishes were artfully created, with bold vivid flavors. 

    What we Ate: the 38 EURO Tasting Menu

    Turnip with kimchi carrot sauce, basil oil, turnip leaf sauce, pine nuts, sesame, and parsley.

    Whipped sweet potato cheese, blood orange, and chives.

    Smoked celery cream, buckwheat, and duxelle mushrooms.

    The knifework was meticulous, and the mushroom was cut up into little pellets that were similar in size to the buckwheat.

    I actually felt that I was fine without the protein and I was pretty full after the entire meal was over. Bryan decided to get the optional cheese plate (partially to get some extra protein). With the cheese, he felt that it was a good amount of food.

    Overall I really enjoyed the dishes for the price of €38 for the four course tasting. I thought the quality was much higher than the price would let on. Perhaps the cost of the ingredients for a vegetarian meal is lower. But still, I thought that this was a great place to have a nice meal in a very nice trendy environment. The staff were friendly, the food was enjoyable, and overall we had a great time sitting at the counter.
